Terra Brasilis girando entorno do aroma do café (Terra Brasilis spinning around the coffee’s aroma)



O café é uma bebida consumida por 97% da população brasileira - em termos de penetração, só perde para a água. Nos últimos oito anos, o consumo do cafezinho fora de casa cresceu 307%.

A bebida é uma das mais democráticas que existe, já que o preço da xícara varia de R$ 2,50 a R$ 3, em média. A junção do aumento do número de pessoas que fazem refeições fora de casa com o baixo custo do café faz com que abrir uma cafeteria seja uma oportunidade de negócio vislumbrada por muita gente.

O formato das cafeterias também pode variar: desde o modelo restaurante - em que há mais opções no cardápio - até quiosques, em que o objetivo é que o tempo de permanência dos clientes seja menor. Outro aspecto interessante é a quantidade ainda pequena de espaços onde o café seja a bebida principal.




Existem cerca de 3,5 mil cafeterias espalhadas pelo País. Desse total, entre 1,2 mil e 1,3 mil são unidades de grandes redes. A maior parte pertence a empreendedores individuais. Isso acontece porque o investimento para a abertura de uma cafeteria é relativamente pequeno, entre R$ 80 mil e R$ 100 mil.

A percepção das redes de cafeteria, bem como a de representantes da cadeia produtiva e especialistas no setor do café é uma só: a segunda bebida mais tomada no mundo passa por um momento de qualificação no consumo e tende a níveis superiores de apreciação no Brasil.

O café é a bebida da década. O café gourmet vai chegar às massas porque é um luxo barato.



A Abic estima que há 3.500 cafeterias no Brasil, por meio das quais se escoa parte dos 19,1 milhões de sacas consumidas pela população (em 2010). O consumo per capita foi de 6,10 kg de café em grão cru ou 4,88 kg de café torrado, quase 82 litros para cada brasileiro por ano, registrando uma evolução de 1,45% em relação ao período anterior.

Os brasileiros estão consumindo mais xícaras de café por dia e diversificando as formas da bebida durante o dia, adicionando ao café filtrado consumido nos lares, também os cafés espressos, cappuccinos e outras combinações com leite.

Pesquisas complementares, por sua vez, mostraram aumento do consumo de café extra-forte: de 15% em 2007, para 19,6% em 2010. Nesse tipo de café o rendimento é maior, isto é, usa-se menos pó para preparar o café filtrado. A melhora da qualidade é o motor do consumo.

A perda de produção de cafés arábica em países importantes como Colômbia e Guatemala, com redução de estoques mundiais e no Brasil, junto com consumo mundial crescente, irá pressionar os preços da matéria-prima, especialmente no primeiro trimestre de 2012.




Os preços do café nas prateleiras de supermercados de São Paulo, iniciaram Janeiro com o valor médio de R$ 11,12/kg e encerraram Dezembro com R$ 13,26/kg, numa evolução de 19,2%, depois de ficarem estáveis por quatro anos. Neste mesmo período, o café em grão cru subiu mais de 70%, nos tipos mais usuais para a indústria. O café, entretanto, continua sendo um produto muito acessível aos consumidores, mesmo nas categorias de mais qualidade e maior valor agregado, como os cafés Superiores e Gourmet.

Coffee is the drink of the Decade. The gourmet coffee will reach to the masses because it is a cheap luxury.

The loss of production of Arabica coffees in key countries such as Colombia and Guatemala, with reduction of stockpiles and in Brazil, along with growing worldwide consumption, will put pressure on the prices of raw materials, especially in the first quarter of 2012.

Coffee prices on the shelves of supermarkets of São Paulo, started January with the average value of US$ 6,25/kg and ended December with us US$ 7,45/kg, an evolution of 19.2%, after staying stable for four years. In this same period, the raw coffee beans rose more than 70%, the most usual types for the industry. Coffee, however, remains a very affordable product for consumers, even in the categories of higher quality and greater added value, as the Superior and Gourmet coffees.

150 ml de café espresso / 150 ml espresso coffee

45 ml chantilly / 45 ml whipped cream



Coloque o licor e café em um copo de café irlandês e mexa. Cubra com creme e servir no copo irlandês.

Pour liqueur and coffee into an irish coffee cup, and stir. Top with cream, and serve.
