Bolo de Café Crunch (Coffee cake crunch)


38 g de farinha peneirada
43 g de açúcar
7g sal
6 ovos gemas
7,5 ml água
7 -8 ovos brancos
14g creme Tartaro
14  g baunilha
14 ml suco de limão fresco
14g Raspas de limão ralada

Cobertura 
14 ml de bicarbonato de sódio
 7 ml Strong fabricada café
21 g de açúcar
7 ml lxarope de milho
474 ml pesado creme
28 g de açúcar
30 ml Vanilha aromatizantes
óleo vegetal

Como fazer
Pré-aqueça o forno, spray panela com antiaderente vegetal cozinhar spray.
Peneire a farinha, ¾ xícara de açúcar e o sal em uma folha de papel de cera. Retiradas. Usando uma batedeira, bater as gemas com ¼ xícara de açúcar até amarelo pálido e espesso. Adicione a água e bata até engrossar, cerca de 4 minutos. Bata as claras de ovos na bacia de um misturador pesado até apenas espumoso. Adicione o creme de tártaro. Bata até formar picos moles. Adicione restantes de ½ xícara de açúcar em um fluxo constante, mexendo até formar picos mais espessa aguerrida, brilhante - cerca de 2 a 3 minutos. Bata junto à baunilha, suco de limão e raspas de limão.
Despeje a mistura de gema sobre brancos. Dobre juntamente com ajuda de espátula de borracha ou usando uma espátula de metal, colher um terço da mistura de farinha e polvilhe sobre a mistura. Repetir duas vezes mais até ingredientes são apenas incorporados. Suavemente derrame a massa na bandeja preparada com fundo removível.

 Asse. Deixe para esfriar por cerca de 50 minutos. Em seguida, remover. Cobrir o bolo com um rack e invertido. Remova o fundo da panela. 
Cobertura
Peneire o bicarbonato de sódio em uma folha de papel de cera. Defina nas proximidades. Combine café, açúcar e xarope de milho em uma panela pesada, 4-litro. Coloque em fogo médio-baixo, mexendo ocasionalmente, até que o açúcar se dissolva. Quando a mistura é clara e começa a ferver, aumentar o calor para médio-alto; Cozinhe até que a mistura atinge 143°C em um termômetro de doces.  No final do cozimento (aproximadamente 132-138°C), mexa ocasionalmente para evitar a mistura de escaldante e tornar-se demasiado espumoso. Retire do fogo e mexer em bicarbonato de sódio (mistura será espuma até ferozmente). Enquanto ainda a formação de espuma, derrame em assadeira oleada. Deixe fresco, por pelo menos 1 hora. Triturar em pedaços muito pequenos. (Coloque entre 2 folhas de papel de cera e toque ou rolar com rolo). Armazenar em um recipiente hermético.  A gemada combinar com a nata, açúcar e baunilha. Bata até que o creme possui picos moles. 
Para montar: o bolo em três camadas iguais usando uma faca serrilhada. Espalhar o creme chantilly entre cada camada, cuidadosamente empilhamento de camadas. Espalharam restante Chantilly superior e os lados do bolo. Leve à geladeira. Pouco antes de servir, polvilhe generosamente superior e os lados com a crise do café.

 14 g Cream of Tarter
 14 g Vanilla
 14 ml Fresh lemon juice
 14 g Grated lemon zest

Topping
 14 g baking soda, sitfed
7 ml Strong brewed coffee
21 g sugar
7 ml Light corn syrup
474 ml Heavy cream
28 g Sugar
30 ml Vanilha
 Unflavored vegetable oil

Preheat oven, spray pan with non-stick vegetable cooking spray.
Sift flour, ¾ cup sugar and the salt onto a sheet of wax paper; set aside. Using an electric mixer, beat egg yolks with ¼ cup sugar until thick and pale yellow. Add water and beat until thickened, about 4 minutes. Whisk egg whites in bowl of a heavy-duty mixer until just frothy. Add cream of tartar; whisk until soft peaks form. Add remaining ½ cup sugar in a steady stream, whisking until thicker, stiffer, glossy peaks form - about 2 to 3 minutes. Whisk in vanilla, lemon juice and lemon zest. Pour yolk mixture over whites. Fold together with rubber spatula.

Using a metal spatula, scoop up a third of the flour mixture and sprinkle over mixture; fold in with a rubber spatula. Repeat two more times until ingredients are just incorporated. Gently pour batter into prepared pan with removable bottom. Level top with a rubber spatula. Bake until top springs back slightly when lightly touched. Allow to cool for about 45 mins. and then remove from pan. Cover cake with a rack, and invert; remove bottom of pan.

Coffee Crunch Topping
Generously oil a large baking sheet; sift baking soda onto a sheet of wax paper; set nearby. Combine coffee, sugar and corn syrup in a heavy, 4-quart saucepan. Place over medium-low heat, stirring occasionally, until sugar dissolves. When mixture is clear and begins to boil, increase heat to medium-high; cook until mixture reaches 290°F on a candy thermometer.

Towards the end of the cooking (around 270-280°F), stir occasionally to prevent mixture from scorching and becoming too foamy. Remove from heat and stir in baking soda (mixture will foam up fiercely). While still foaming, pour out onto oiled baking sheet. Do not spread; let cool, undisturbed for at least 1 hour. Crush into very small pieces. (Place between 2 sheets of wax paper and tap or roll with rolling pin.) Store in an airtight container.

For the frosting
Combine cream, sugar and vanilla; beat until cream holds soft peaks
.

To assemble: Slice cooled cake into three equal layers using a serrated knife. Spread whipped cream between each layer, carefully stacking layers. Spread remaining whipped cream over top and sides of cake. Refrigerate. Just before serving, generously sprinkle top and sides with the coffee crunch.
