Cafeteria suas origens (Cafeteria its origins)


Foi em Meca que surgiram as primeiras cafeterias, conhecidas como Kaveh Kanes. Cidades como Meca, eram centros religiosos para reza e meditação e a religião muçulmana proibia o consumo de qualquer tipo de bebida alcoólica. Desta forma, os Kaveh Kanes se transformaram em casas onde era possível se passar à tarde conversando, ouvindo música e bebendo café. A bebida conquistou Constantinopla, Síria e demais regiões próximas. As cafeterias tornaram-se famosas no Oriente pelo seu luxo e suntuosidade e pelos encontros entre comerciantes, para a discussão de negócios ou reuniões de lazer.

O café conquistou definitivamente a Europa a partir de 1615, trazido dos países árabes por comerciantes italianos. O hábito de tomar o café, principalmente em Veneza, estava associado aos encontros sociais e à música que ocorriam nas alegres Botteghe Del Caffè. Em 1687 os turcos abandonaram várias sacas de café às portas de Viena, após uma tentativa frustrada de conquista, e estas foram usadas como prêmio pela vitória. Assim é aberta a primeira coffee house de Viena e difundido o hábito de coar a bebida e bebê-la adoçada com leite - o famoso café vienense.

As cafeterias desenvolveram-se na Europa durante o século XVII, enquanto florescia o Iluminismo e se planejava a Revolução Francesa. Durante tardes inteiras, jovens reuniam-se em torno de várias xícaras de café, discutindo o destino das nações, declamando poemas, lendo livros ou simplesmente passando o tempo. Atualmente, algumas casas famosas como o Café Procope, em Paris, e o Café Florian, em Veneza, ainda preservam o glamour dessa época.
Até hoje os cafés são locais onde pessoas se reúnem para discutir assunto importantes ou simplesmente passar o tempo, sendo o ritual do cafezinho uma tradição que sobreviveu a todas as transformações.

Nos últimos anos, houve uma onda provocada pelas modernas máquinas de café expresso, que revolucionaram o hábito do cafezinho, permitindo um crescimento vertiginoso das cadeias de lojas de café.

A técnica de gerenciamento por meio do sistema de licença da marca também permitiu um rápido desenvolvimento dessas lojas especiais, voltadas para um mercado mais exigente, o de café Gourmet.
