Ecogastronomia /Slow food




O movimento Slow Food representa a união entre a ética e o prazer da alimentação com uma palavra: eco gastronomia.  Restitui ao alimento sua dignidade cultural, favorece a sensibilidade do gosto e luta pela preservação e uso sustentável da biodiversidade. Protege espécies vegetais e raças animais, contribuindo com a defesa do meio ambiente, da cozinha típica regional, dos produtos saborosos e do prazer da alimentação.
O Slow Food preconiza o reconhecimento da importância do prazer aliado à alimentação. Devemos aprender a apreciar a larga gama de receitas e sabores e reconhecer a variedade de lugares e pessoas cultivando e produzindo alimentos. Devemos respeitar os ritmos das estações e do ato de conviver. 
Além disso, a receita desenvolvida por Carlo Petrini e os membros do Slow Food propõe um novo senso de responsabilidade na busca do prazer. Demanda que todos têm o direito de aproveitá-lo. O Slow Food chama este conceito de Ecogastronomia. É uma atitude capaz de combinar o respeito e interesse na cultura enogastronômica com apoio para aqueles que lutam para defender os alimentos e a biodiversidade agrícola no mundo todo.
Ainda dentro do princípio da ecogastronomia, o Slow Food apóia um novo modelo de agricultura, que é menos intensivo e mais saudável e sustentável, com base no conhecimento das comunidades locais. Este é o único tipo de agricultura capaz de oferecer formas de desenvolvimento para as regiões mais pobres do nosso planeta. 
Por esta razão o Slow Food está comprometido a salvaguardar alimentos, matéria-prima e métodos tradicionais de cultivo e transformação dos alimentos. Luta para defender a biodiversidade de variedades sejam elas cultivadas ou selvagens, e proteger os locais de convívio que formam a herança cultural devido ao seu valor histórico, artístico e social.
Considerando uma variedade de fruta ou um prato tradicional local, não é possível ignorar sua relação com a história, cultura e ambiente de onde se originou. Portanto, o Slow Food estressa a importância da produção agrícola para manter o equilíbrio de respeito e troca com o ecossistema. É por isso que o Slow Food foi definido como um movimento de eco-gastrônomos.


The Slow Food movement represents the Union between ethics and pleasure of eating with one word: echo gastronomy.  Restores the dignity, cultural promotes sensitivity of taste and fight for the preservation and sustainable use of biodiversity. It protects plant species and animal breeds, contributing to the protection of the environment, typical regional cuisine, tasty food and the pleasure of food. 
Slow Food advocates the recognition of the importance of pleasure ally to power. We should learn to appreciate the wide range of recipes and flavors and recognize the variety of places and people cultivating and producing food. We must respect the rhythms of the seasons and the Act of living. 
 In addition, the recipe developed by Carlo Petrini and Slow Food Members proposes a new sense of responsibility in the pursuit of pleasure. Demand that everyone has the right to use it. Slow Food calls this concept of Ecogastronomia. It is able to combine the respect and interest in the culture enogastronômica with support for those struggling to defend the food and agricultural biodiversity worldwide. 
Still within the principle of ecogastronomia, Slow Food supports a new model of agriculture which is less intensive and more healthy and sustainable, based on knowledge of local communities. This is the only type of agriculture can offer ways to development for the poorer regions of our planet.  
For this reason Slow Food is dedicated to safeguarding food, raw materials and traditional methods of cultivation and processing of foodstuffs. Struggle to defend the biodiversity of these varieties are cultivated or wild, and protect places of conviviality that make up the cultural heritage due to its historical, artistic and social. 
Considering a variety of fruit or a local traditional dish, cannot ignore its relationship with the history, culture and environment where it originated. Therefore, the Slow Food stresses the importance of agricultural production to maintain the balance of respect and exchange with the ecosystem. This is why Slow Food was defined as a movement of eco-responsible gastronomes.
